Norwegian Waffles (Vafler)
Ingredients:

1 1/2 cups flour

1/2 cup plain yoghurt

1/2 cup milk

2 tbs brown sugar (must be brown sugar)

1 large egg
-
1 tsp baking powder
-
1 tsp vanilla sugar - (1/2 tsp vanilla extract)
or:
A hint of cardamom (4-5 crushed seeds from a pod)

2 tbs melted unsalted butter (can substitute olive oil)

1/2 tsp salt
Preparation:
Sieve the flour and baking powder together and keep aside. Whisk the egg
and suger togther in a mixing bowl. Add the yoghurt, salt, cardamom
and/or vanilla. Whisk and start adding the flour, little by little. When
the batter becomes too thick, add milk to keep the consistency smooth and
creamy. Let the batter stand for at least 20 mins. Just before you start
to bake the waffles, melt the butter and whisk it into the batter.
The wafles should come from the wafle iron a little crispy on the
outside. Eat them as they are or stack them up as you make them
and they will become soft.
